buttermilk waffles

Not much to say about these except sweet lord these were some dang good waffles.

the ingredients

1 c all purpose flour

1 teaspoon baking powder

3/4 teaspoon baking soda

pinch of salt

2 tablespoons sugar

6 tablespoons butter

2 egg yolks + 2 egg whites

1 teaspoon of vanilla

1 cup of buttermilk (if you don’t have buttermilk, measure 1 cup of milk and mix it with 1 tablespoon of vinegar. Let it sit for a few minutes and then shake it before use.)

what to do

Melt the butter and set it aside to cool. Mix your dry ingredients in a small bowl and separate your eggs into two separate containters.

In a larger bowl, whisk together your egg yolks, vanilla, butter and milk until incorporated.

Gradually add your dry ingredients.

In an electric mixer, (unless you have arms of still and major whisking powers) beat your egg whites until they form medium stiff peaks.

Take 1/4 of the egg whites and add it to the mixture and then gradually fold in the remaining whites.

Pour onto your heated and sprayed waffle iron.

These pair nicely with nutella, fresh fruit and maple syrup.
