Peaches are one of the things that I always associate with the summer time. Sadly, I don’t like them in much of anything. Peach cobbler = eh, peach ice cream = gag me. Peach lemonade on the other hand is something I could drink by the gallon.
4 medium peaches, pitted and sliced in half
1 tablespoon of granulated sugar
4 cups of fresh lemonade
what to do
Preheat oven to 400
Place the peaches skin side down onto a baking sheet and sprinkle with the sugar.
Roast the peaches for 25 minutes until they look juicy and the skins look like they are super soft.
Let the peaches cool and then easily remove the skins with your hands and place the peeled peaches into a blender.
Pour in just enough lemonade to cover all of the peaches in the blender. Puree until the mixture is a little frothy.
Use a fine mesh strainer to get rid of any bits + pieces that may be in the peach mixture. Strain into a pitcher and stir in the lemonade.
Let it chill for about 20 minutes to let the flavors blend. Stir again and serve over ice. In a mason jar of course.
My sister Sara had the fabulous idea that I should turn this into a sorbet…things to ponder.
Stay cool out there!
